Ingredients
  

Pasta and Chicken
  • 3 cups cooked spaghetti drained
  • 2 cups cooked chicken shredded
  • 1 cup diced bell pepper any color
  • 1 cup diced onion
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper adjust to taste
  • Salt and pepper to taste
  • 0.5 cup breadcrumbs optional for topping
  • 2 tablespoons olive oil optional for breadcrumbs

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Cook your spaghetti according to the package instructions. Drain and set aside.
  3. Shred your cooked chicken.
  4. In a large mixing bowl, combine the cooked spaghetti, shredded chicken, diced bell pepper, diced onion, cream of chicken soup, sour cream, half of the cheddar cheese, half of the pepper jack cheese, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Mix well.
  5. Transfer the mixture into a greased 9x13-inch baking dish. Spread evenly. Sprinkle the remaining cheddar and pepper jack cheeses on top. If desired, mix breadcrumbs with olive oil and sprinkle over the cheese layer.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown. Let cool for 5-10 minutes before serving.
