Chicken
  • 3 pounds chicken pieces legs, thighs, breasts, or wings
  • 2 cups buttermilk for marinating
  • 2 teaspoons hot sauce optional
  • 2 cups all-purpose flour for coating
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper optional
  • vegetable oil for frying choose a neutral oil with a high smoke point

  • large skillet or deep fryer

Method
 

  1. Marinate the chicken in buttermilk and hot sauce for at least 120 minutes or overnight.
  2. Prepare the coating by mixing flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper in a bowl.
  3. Dredge the marinated chicken in the flour mixture, ensuring an even coating.
  4. Heat vegetable oil in a skillet or deep fryer to 350°F.
  5. Fry the chicken pieces for 12-15 minutes on each side until golden brown and cooked through.
  6. Drain the fried chicken on a wire rack or paper towels and let it rest before serving.
