Method
 

  1. Season the chicken breasts with salt, black pepper, garlic powder, and Italian seasoning.
  2. Chop the sun-dried tomatoes and spinach.
  3. Mix the chopped sun-dried tomatoes, heavy cream, chicken broth, and olive oil in a bowl.
  4. Place the seasoned chicken breasts in the slow cooker and pour the creamy sauce mixture over the chicken.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours. Stir in chopped spinach and grated Parmesan cheese 30 minutes before serving.
