Chicken
  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon fresh basil, chopped (for garnish)

Method
 

  1. Season the chicken breasts with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, add minced garlic and Italian seasoning. Sauté for 1 minute until fragrant.
  3. Pour in chicken broth and heavy cream. Stir well and bring to a gentle simmer.
  4. Add the seared chicken back into the skillet, cover, and cook on low for 4-6 hours or on high for 2-3 hours.
  5. Stir in grated Parmesan cheese before serving and garnish with fresh basil.
