  • 1 can (15 ounces) corn Sweet corn.
  • 1 can (10.5 ounces) cream of mushroom soup Binds ingredients together.
  • 1 cup shredded cheddar cheese For topping.
  • 1 cup diced tomatoes with green chilies Adds zest.
  • 1 teaspoon garlic powder Enhances flavor.
  • 1 teaspoon onion powder Adds depth.
  • 1 teaspoon chili powder For warmth.
  • 1/2 teaspoon salt Enhances flavors.
  • 1/2 teaspoon black pepper Adds kick.
  • 1 package (2.5 pounds) frozen tater tots Crispy topping.
  • to taste fresh cilantro or green onions Optional garnish.

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef for 5-7 minutes until browned. Drain excess fat.
  3. Add black beans, corn, diced tomatoes, cream of mushroom soup, garlic powder, onion powder, chili powder, salt, and black pepper. Mix well and simmer for 5 minutes.
  4. Transfer the mixture to a 9x13 inch baking dish and spread evenly.
  5. Arrange tater tots in a single layer on top of the beef mixture.
  6. Bake for 30-35 minutes until tater tots are golden brown. Sprinkle cheese on top and bake for an additional 5 minutes until melted.
  7. Let cool for a few minutes before serving. Garnish with cilantro or green onions if desired.
