Ingredients
  

For the Classic Meatloaf
  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup ketchup, divided
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 large eggs
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Cheesy Mashed Potatoes
  • 2 pounds potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup butter
  • 1/4 cup milk
  • Salt and pepper to taste

Method
 

  1. Combine ground beef, breadcrumbs, and milk in a large mixing bowl. Add ketchup, onion, bell pepper, eggs, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until well combined.
  2. Transfer the mixture into a loaf pan and shape it into a loaf. Spread remaining ketchup on top.
  3. Preheat oven to 350°F. Bake the meatloaf for 60 minutes or until the internal temperature reaches 160°F. Let it rest for 10 minutes before slicing.
  4. Boil cubed potatoes in a large pot until tender, about 15-20 minutes. Drain and return to pot.
  5. Add sour cream, butter, and milk to the potatoes. Mash until smooth and fold in cheddar cheese. Season with salt and pepper.
  6. Serve sliced meatloaf with a generous scoop of cheesy mashed potatoes.
