  • 2 cups warm water (about 110°F)
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1/4 cup granulated sugar for dough
  • 4 1/2 cups all-purpose flour base of the dough
  • 1 teaspoon salt enhances flavor
  • 1/4 cup baking soda for boiling
  • 1 large egg, beaten for egg wash
  • 1/4 cup coarse sea salt for sprinkling
  • 1/2 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon for coating
  • 1/4 cup unsalted butter, melted for brushing

Method
 

  1. In a large mixing bowl, combine warm water, active dry yeast, and 1/4 cup of granulated sugar. Stir gently and let it sit for 5 minutes until foamy. Add all-purpose flour and salt, stir until a dough forms, then knead for 5 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
  2. Punch down the risen dough and divide into 12 equal pieces. Roll each piece into a 12-inch rope and twist into pretzel shapes or leave as straight ropes. Place on a parchment-lined baking sheet.
  3. In a large pot, bring 10 cups of water to a boil. Carefully add baking soda. Drop each pretzel into boiling water for 30 seconds, then remove and place back on baking sheets.
  4. Preheat oven to 425°F. Brush each pretzel with beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.
  5. Mix 1/2 cup granulated sugar and 2 teaspoons ground cinnamon in a small bowl. Brush warm pretzels with melted butter and coat with cinnamon-sugar mixture.
