In a large mixing bowl, combine warm water, active dry yeast, and 1/4 cup of granulated sugar. Stir gently and let it sit for 5 minutes until foamy. Add all-purpose flour and salt, stir until a dough forms, then knead for 5 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
Punch down the risen dough and divide into 12 equal pieces. Roll each piece into a 12-inch rope and twist into pretzel shapes or leave as straight ropes. Place on a parchment-lined baking sheet.
In a large pot, bring 10 cups of water to a boil. Carefully add baking soda. Drop each pretzel into boiling water for 30 seconds, then remove and place back on baking sheets.
Preheat oven to 425°F. Brush each pretzel with beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.
