Preheat the oven to 375°F.
In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat.
Add diced onion and minced garlic to the skillet and sauté for 3-4 minutes until the onion is translucent. Season with salt, black pepper, and paprika.
In a mixing bowl, combine the cooked beef mixture with shredded cheddar cheese, sour cream, cream of mushroom soup, and frozen mixed vegetables. Stir until well combined.
Spread the beef mixture evenly in a greased 9x13-inch baking dish.
Arrange the frozen tater tots in a single layer on top of the beef mixture.
Bake in the preheated oven for 30-35 minutes until the tater tots are golden brown and crispy. Let cool for 5 minutes before serving.
