Cauliflower
  • 2 cups cauliflower florets fresh or frozen
  • 1 cup cream cheese softened
  • 1 cup shredded cheddar cheese
  • 0.5 cup crumbled bacon cooked
  • 0.25 cup diced jalapeños fresh or pickled
  • 0.25 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 0.25 cup green onions sliced, for garnish

Method
 

  1. Prepare the cauliflower by washing and cutting it into small florets. Steam until tender, about 5-7.
  2. In a large mixing bowl, combine cream cheese, cheddar cheese, bacon, jalapeños, and sour cream. Add garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Fold in the prepared cauliflower gently to avoid mashing. Transfer to a greased 9x9-inch baking dish and spread evenly.
  4. Mix panko breadcrumbs with olive oil and sprinkle over the casserole. Bake in a preheated oven at 375°F for 25-30 until golden brown and bubbly.
